You forgot to sprinkle them with cheese after they come out of the oil.

Peanut oil is rarely the wrong answer. Canola oil is ok if you have plenty already.

Tallow will be best though. Bonus if you go that route: you can make the original recipe of McDonald's fries but beware that you'll be (more) ruined on the trash they sell today.
