Also my understanding is most gum is designed to last roughly 20mins before you need another piece. (Doesn't stop me from chewing it for potentially hours)

Yep, doesn't happen with any specific brand. If this happens then it means the gum is old.
Yeah after a long, long time chewing, it turns into a paste. I learned this when I was forced to keep a piece in my mouth for hours beside my mom thought it was disrespectful to some event to go to a trash can.
But yeah, I think all gums do this. Just due to the gum's chemicals mixing with your saliva. All foods do this at some point.
I've had gum from other brands just completely break down after chewing it too long.
