No, just in a very short time frame. You probably don't chug two gallons straight up, but if you'd did it'd be super dangerous. Even one gallon could be dangerous if chugged.

I use iRedMail but would I call it simple? No. Mail is such old tech that simple really isn't the word for it. Archaic, ancient and dying fits better. But it will take decades more to actually die. iRedMail is available as a single container, which isn't correct from a container perspective but makes everything a lot easier in my opinion. Of the various solutions I've tried it's the one closest to the goal of "It just works". The biggest downside is the manual steps often needed to upgrade version. Not to time consuming but far from "It just works".

You could do the free wifi defense and set a super poor password and spend a month or so downloading legal stuff without a VPN before going arr using a VPN. And if someone comes knocking just say you don't recall having a debrid account and claim you must've been hacked.

I'd go with ZFS because balancing between the included disk in a Ceph pool will consume I/O and especially if one disk fails, that rebuild would take days if not weeks. If you want to try Ceph then don't include all the 8 drives initially and see how the performance is with the minimum 3 drives.

8 drives over USB 3.0 won't perform well, though a single SATA connection isn't without issues either. That cable will be the I/O limiter in an uncommon fashion. I'd go for the eSATA converter option but neither is ideal. A big question is how will the drives be seen by Proxmox? If it's as one big drive that means you're SOL for safe storage options, if so I wouldn't store anything you don't want to lose on there and just make a ZFS storage pool of it in Proxmox.

As for plans I would down the line look at Ceph because it does really well with cheap hardware. No need for a competent RAID controller etc.

You paid $0 for the USB SSD? Hehe, just messing with you, welcome to the fun side and I'm sure there will be a lot more updates to your setup over the years! Once you tire of manually hunting torrents you can setup the famous Arr! Stack and if you trust your family they can get login to Radarr and Sonarr such that they can themselves pick out content they want available. And if you want to focus more on the tech and possibilities of self-hosting there are great communities for that as well!

Fair point. Most really cheap crap is long gone these days. But I'd rather sit in one of those three than a Land Rover, Ssangyong or Nissan (which has been plagued with horrible reliability issues as of late).

Kinda makes sense that they fit under the same umbrella. It's a large section of what I'd call mediocre car makers. Not the absolute worst, but far from the best.
