The fact that your old cable was cat5e has no bearing whatsoever on you getting shit speeds before changing cables. The gigabit spec was codified and products were on the market before the cat5e spec was ratified. Gigabit ethernet was literally made for standard cat5. I bet your previous cable was terminated incorrectly, and was only using two of the four pairs, limiting you to 100mbit.
These are not alternatives to modern browsers.

I like being able to access it anywhere, on (most) any device of my choosing.
Takes an hour to charge my mouse, and the charge lasts for ~2months. My mouse becomes a wired mouse for that hour.
I will if Plex ever stops doing what I need it to. As it stands, it works perfectly fine so I see no reason to switch.
I prefer having them instantly accessible from my truenas server. Plex is a godsend.
