Saying Gen Z and Millennials are "more into gig work" is kinda like saying black people are "more into incarceration". I assure you, it is not indicative of a preference.

Yeah, it is bullshit. The correct way to say it is that Gen Z and Millenials are being fucked up by the system and exploited, and the gig work is often the only source of income they have.

Are we "into" it, or are careers just fictional now?

Trying to stay at the same company for any length of time is a terrible move these days. I think without exception you will always get better pay raises moving to a different company than moving up in the same company. If you're not just laid off by the hundreds or thousands.

Young people should be organizing.

Yes I’m working a gig job as a second job rn. Not because I’m into it or want to (though it is somewhat enjoyable relatively speaking), but because I need the few hundred dollars a month. Same reason I work at all. Not because I’m into it but because I need to.
